Fratelli Mantova traces its history to 1905. The family business built its reputation around edible oils, then kept challenging the way those oils could be presented and used. It began producing flavored oils in 1985; in 2012, that appetite for invention led to Sprayleggero, its natural spray-oil system.

The idea is deceptively simple: protect the oil from air and light and deliver it in a controlled mist. Mantova's bag-on-valve technology keeps the product separate from the compressed air that operates the package, so the oil itself requires no added propellant.

How to use it

Think of the spray as a cook's finishing tool.

A mist gives broad, delicate coverage. A longer press adds more. The point is control: coat a surface evenly without drowning the ingredient underneath.

Shake when directed

Follow the package directions first. For blended dressings in particular, shaking helps bring the ingredients back together before spraying.

Hold above the food

For an even veil, give yourself a little distance. Move across the plate or pan rather than concentrating the spray in one spot.

Build in layers

Start lightly, taste, then add more. A spray is especially useful when the final seasoning should be present everywhere but heavy nowhere.

Why the can matters

Protected from light. Protected from air.

Mantova says its Sprayleggero system places pure oil inside a gas-tight bag within the can. The bag-on-valve design protects the oil from light and air even after opening and allows spray, stream or drip dispensing without adding propellants to the oil.

Most cooking sprays are not olive oil at all; they are oil thinned with water, emulsifiers and propellant so it will fly. The Spray Pantry is the opposite idea. Fratelli Mantova, a family firm pressing and bottling oil in Italy since 1905, puts real extra virgin olive oil, real Sicilian lemon and real balsamic of Modena into a fine, even mist, so a salad is dressed without a wet bottom, a tray of vegetables browns instead of stewing, and a fillet of fish gets exactly the veil of oil it needs and nothing more.
